Why Homemade Hot Honey is a Must-Try

Making hot honey at home isn’t just a fun kitchen project; it’s a smart culinary choice that offers numerous advantages over its store-bought counterparts. Here’s why you should definitely give this recipe a try:

  • Significantly More Affordable: One of the biggest drawcards of making hot honey yourself is the cost savings. The primary ingredients – honey and chili flakes – are relatively inexpensive. Pre-made hot honey, especially gourmet brands, can be quite pricey, often charging a premium for convenience. By crafting it at home, you get a higher quality product for a fraction of the cost, ensuring you always have this delightful condiment on hand without breaking the bank.
  • Unleash Your Inner Chef with Customization: The beauty of homemade hot honey lies in its unparalleled customizability. Do you prefer a gentle warmth that tingles the palate, or a fiery kick that truly ignites your taste buds? You are in complete control! Easily adjust the amount and type of peppers to achieve your desired spice level. Experiment with different chili varieties, like smoked paprika for depth, or even a touch of garlic for an extra layer of flavor, making each batch uniquely yours.
  • Incredibly Versatile for Any Meal: Hot honey is a culinary chameleon, capable of enhancing an astonishing array of dishes. It’s not just for drizzling on fried chicken! Think outside the box and use it on pizzas for an unexpected sweet-spicy kick, or as a glaze for tacos. It’s fantastic with roasted vegetables, cheese boards, grilled salmon, or even stirred into marinades for an irresistible sweet-heat profile. Its versatility makes it a pantry staple you’ll reach for constantly.
  • Quick & Effortless Preparation: In today’s fast-paced world, quick and easy recipes are invaluable. This hot honey recipe is exactly that. With a total preparation and infusion time of less than 20 minutes, you can whip up a batch whenever inspiration strikes or you need a last-minute flavor booster. It requires minimal culinary skills and only a few basic kitchen tools, making it accessible for even novice cooks.
  • Quality Control & Freshness: When you make hot honey at home, you know exactly what goes into it. You can choose high-quality, natural honey and fresh spices, avoiding any unwanted additives or preservatives often found in commercial products. This ensures a fresher, more vibrant flavor profile that truly shines.

Essential Ingredients for Perfect Hot Honey

All the simple ingredients laid out for making delicious hot honey.

Crafting this sensational hot honey requires just a handful of easily accessible ingredients. While the recipe card at the bottom of this post provides exact measurements, here’s a closer look at the key components and why they matter:

  • Honey: The Sweet Foundation. The star of our recipe! Feel free to use any type of honey you prefer and have on hand. For the best flavor and to support local beekeepers, I highly recommend grabbing a local, affordable honey. Its unique floral notes will add character to your hot honey. Lighter honeys like clover or acacia will allow the chili flavor to shine through distinctly, while darker honeys like buckwheat or wild-flower can add a deeper, more complex sweetness that complements the heat beautifully.
  • Red Pepper Flakes & Cayenne Pepper: The Heat Masters. These two spices are your primary tools for introducing that signature heat. Red pepper flakes provide a robust, lingering warmth with visible flecks of chili, while cayenne pepper delivers a sharper, more immediate heat that disperses evenly throughout the honey. For those who enjoy fresh chili flavor, you can also incorporate thinly sliced fresh jalapeño or serrano peppers. These offer a brighter, more vibrant heat and a subtle vegetal note. Remember, you control the amount, so start with a moderate quantity and adjust to your preferred spice level.
  • Apple Cider Vinegar: The Tangy Touch (Optional). A secret ingredient for many store-bought hot honeys, apple cider vinegar adds a subtle, refreshing tang that beautifully balances the sweetness of the honey and the heat of the peppers. Just a small amount is needed to achieve this delightful contrast, preventing the honey from being overly cloying. While optional, incorporating it can elevate your hot honey to a more sophisticated flavor profile. If you omit it, your honey will still be delicious but will have a purely sweet and spicy character.

Step-by-Step Guide: Crafting Your Own Hot Honey

Ready to embark on the simple journey of making your own hot honey? I’ll guide you through each effortless step, ensuring a perfect batch every time. For your convenience, a comprehensive ingredient list and detailed instructions can be found in the printable recipe card located at the bottom of this post.

Steps to make hot honey in a sauce pan with red pepper flakes.
Honey and chili flakes gently simmering in a saucepan, infusing with fiery flavor.
  • Step One: Gently Simmer the Ingredients. Begin by adding your chosen honey, crushed red pepper flakes (or your fresh sliced peppers if using), and cayenne pepper into a medium-sized saucepan. Place the saucepan over medium-low heat. The goal here isn’t to boil the honey, but rather to warm it gently until it just begins to simmer. This gentle heat helps to awaken the volatile oils in the peppers, allowing their capsaicin (the compound responsible for the heat) to infuse thoroughly into the honey, creating a harmonious blend of flavors. Stir occasionally to ensure even heating and prevent scorching.
  • Step Two: Infuse and Enhance Flavors. Once the honey reaches a gentle simmer, remove the saucepan from the heat immediately. Give the mixture a good whisk to ensure everything is well combined. Now comes the crucial part for flavor development: infusion. Set the saucepan aside and allow the hot honey to rest for at least 10-15 minutes. During this time, the heat from the honey will continue to extract the spicy notes from the peppers, deepening the flavor profile and intensifying the heat. For an even more potent spice, you can let it infuse for a longer period, up to 30 minutes.
  • Step Three: Taste and Adjust to Perfection. After the infusion period, it’s time for the most enjoyable step – tasting! Carefully take a small spoonful of the warm honey (be mindful of the heat from the peppers) and give it a taste test. This is your moment to decide if the spiciness is just right for your palate. If you desire more heat, simply add a bit more red pepper flakes or cayenne pepper to the mixture. If you want to further infuse, you can briefly return it to low heat for a few more minutes, then remove and re-infuse. Remember, you can always add more spice, but it’s harder to reduce it once added.
  • Step Four: Strain for Smoothness and Store. Once your hot honey has achieved the perfect balance of sweetness and heat, it’s time to strain it. Place a small, fine-mesh strainer over a clean, airtight storage jar. Carefully pour the honey mixture through the strainer, separating the infused honey from the chili flakes or fresh peppers. You may need to use the back of a spoon to gently press the pepper flakes against the strainer, coaxing out every last drop of flavorful honey. Discard the strained peppers. Finally, if you’re using it, stir in the apple cider vinegar until it’s evenly incorporated. This step adds that delightful tangy note and helps to balance the overall flavor. Your homemade hot honey is now ready to be enjoyed!

Incredible Ways to Enjoy Your Hot Honey

The versatility of hot honey truly knows no bounds. Its unique blend of sweet and savory, with that irresistible spicy kick, allows it to elevate countless dishes. Here are some fantastic ways to incorporate your homemade hot honey into your meals:

  • Crispy Chicken Delights: This is a classic pairing for a reason! Drizzle hot honey generously over chicken tenders, crispy fried chicken, or even boneless wings for an unforgettable flavor experience. It adds a sticky, glistening glaze that’s both sweet and fiery.
  • Elevated Breakfast & Brunch: Take your morning meals to new heights. Drizzle hot honey over fluffy pancakes, waffles, French toast, or even a simple bowl of yogurt and granola. It’s also sensational on buttered biscuits or cornbread for a Southern-inspired twist.
  • Sweet & Savory Pastries: Give sweet treats an exciting edge. A light drizzle over my easy apple pastries, croissants, or even vanilla ice cream provides an unexpected, delightful contrast.
  • Pizzas with a Kick: Transform your favorite pizza into a gourmet experience. A drizzle of hot honey on a pepperoni, sausage, or even a plain cheese pizza adds a fantastic dimension of flavor. It also pairs wonderfully with my Pizza Bowls for a convenient and flavorful meal.
  • Gourmet Cheese Boards: Impress your guests by serving hot honey alongside a variety of cheeses (especially goat cheese, brie, or cheddar), crackers, and fresh fruit. The sweet heat perfectly complements the salty and creamy notes of the cheese.
  • Roasted Vegetables Reinvented: Toss roasted carrots, Brussels sprouts, sweet potatoes, or even broccoli florets with hot honey during the last few minutes of cooking. The honey caramelizes beautifully, adding a delicious glaze and a touch of heat.
  • Marinades and Glazes: Incorporate hot honey into marinades for chicken, pork, or shrimp. It helps tenderize the meat while infusing it with incredible flavor. It also makes an exceptional glaze for grilled or baked meats.
  • Burgers & Sandwiches: Add a dollop of hot honey to your burgers or pulled pork sandwiches for a sweet and spicy upgrade. It can replace traditional BBQ sauce or complement it perfectly.

Expert Tips for the Best Hot Honey

  • Prevent Burning the Honey: It’s crucial to use medium-low heat and keep a close eye on your honey. Honey can burn quickly, developing a bitter taste if it gets too hot. The goal is just a gentle simmer, enough to facilitate the infusion of heat, not a rolling boil.
  • Reheat for Easier Straining: If you find that your hot honey has become too thick to pass easily through the fine-mesh strainer after cooling, simply warm it up again slightly over very low heat. This will thin out the honey, making the straining process much smoother and ensuring you don’t waste any of that precious liquid gold.
  • Optimal Storage for Freshness: For the best quality and extended shelf life, store your homemade hot honey in a clean, airtight glass jar. While it can be stored at room temperature in a cool, dark pantry for several weeks (especially if omitting ACV), refrigerating it is recommended if you’ve added apple cider vinegar or for longer preservation. Stored in the fridge, it will last for up to 5 days with ACV, and several months without.
  • Apple Cider Vinegar is Optional: Many popular hot honey brands and recipes include apple cider vinegar for its distinctive tang. This adds a lovely complexity that balances the sweetness and heat. However, if you prefer a purer sweet-spicy flavor, or if you want to extend the shelf life of your hot honey significantly (ACV can slightly reduce shelf life, though still very long without it), feel free to omit it. The honey will still be delicious!
  • Experiment with Heat Levels: Don’t be afraid to taste and adjust the spice level as you go. Start with the recommended amount of peppers, then add more incrementally if you prefer a fiercer kick. Remember that the heat will continue to infuse as the honey sits, so it might get spicier over time.
  • Consider Different Peppers: While red pepper flakes and cayenne are common, you can also experiment with other dried chilies like anchos (for a smoky flavor), chipotles (also smoky with medium heat), or even a touch of ghost pepper for extreme heat if you dare!

Your Hot Honey Questions Answered

How Long Will Homemade Hot Honey Last?

The shelf life of your hot honey largely depends on whether you include apple cider vinegar. For the longest possible shelf life, which can extend to several months, it’s best to omit the apple cider vinegar. Store your hot honey in a clean, airtight container in a cool, dry place away from direct sunlight. If you do add apple cider vinegar, it’s generally recommended to store it in the refrigerator for up to 5 days, as the vinegar can introduce a slight risk of fermentation over extended periods at room temperature, though this is rare with honey’s natural preservative qualities.

Do I Have To Heat The Honey to Infuse It?

For the absolute best result and most robust flavor infusion, lightly heating the honey is highly recommended. The gentle warmth helps to extract the capsaicin and other flavorful compounds from the peppers more effectively and efficiently. While you can technically add pepper flakes and cayenne pepper to room temperature honey and let it sit, it won’t infuse with the same intensity or speed. The heat accelerates the infusion process, resulting in a much more potent and well-rounded spicy honey.

Can I Use Different Types of Honey?

Absolutely! The beauty of homemade hot honey is its adaptability. You can use virtually any type of honey you prefer. Lighter, more neutral honeys like clover or acacia will allow the chili flavor to be more pronounced. Darker, more robust honeys such as buckwheat or wild-flower will add another layer of complexity to the overall flavor profile. Experiment with local varieties to discover your favorite combinations!

What If My Hot Honey Crystallizes?

Crystallization is a natural process for raw honey and indicates its purity; it does not mean your hot honey has gone bad. If your hot honey crystallizes, simply place the jar (with the lid loosely on or off, depending on how you heat it) in a bowl of warm water for a few minutes. The gentle heat will dissolve the crystals and return the honey to its liquid state without affecting its flavor or heat. Avoid microwaving, as uneven heating can damage honey’s beneficial enzymes.

Equipment

  • medium saucepan
  • whisk
  • fine-mesh strainer
  • airtight storage jar

Ingredients

  • 1-1.5
    cup
    honey ,
    *use any honey you prefer

  • tbsp
    crushed red pepper flakes,
*sliced jalapeño or serrano peppers will also work

  • 1
    tsp
    cayenne pepper,
    more as needed

  • 1
    tsp
    apple cider vinegar ,
    optional! Please read the notes.

Instructions

  1. Simmer The Ingredients. Add the honey, crushed red pepper flakes (or fresh peppers if using), and cayenne pepper to a medium saucepan. Heat over medium-low heat until the honey just begins to gently simmer. Do not let it boil vigorously.
  2. Remove the saucepan from the heat, whisk the mixture thoroughly, and set it aside to allow the flavors to infuse. Let it steep for 10-15 minutes (or longer for more intense heat).
  3. Carefully taste the honey. If you desire more spiciness, you can add additional red pepper flakes or cayenne pepper and allow it to infuse for another 5-10 minutes.
  4. Strain The Mixture. Once the honey has reached your desired heat level, strain it through a small, fine-mesh strainer into a clean, airtight storage jar. You may need to press the remaining pepper flakes or fresh peppers with a spoon to extract all the infused honey. Discard the peppers. If using, stir in the apple cider vinegar until evenly combined.

Notes

  • Don’t burn the honey! Just heat it up enough to help it infuse the heat.
  • If the honey gets too thick to work through the mesh strainer, simply reheat it just a bit to help thin it out and get it moving.
  • Store in the fridge for up to 5 days if apple cider vinegar is added. If no ACV is used, store in a cool, dark pantry for several months.
  • The apple cider vinegar is optional, a lot of recipes call for it or brands will have it in theirs. If you leave it out, the honey will have a much longer shelf life.
