- Make Miso Garlic Butter: In a medium bowl, melt the butter. Stir in the minced garlic and miso paste until well combined and smooth.
- Prep Broccolini: Chop broccolini into small pieces. Place them on one half of the prepared baking sheet. Drizzle with olive oil and season lightly with ¼ tsp salt, pepper, and ¼ tsp garlic powder.
- Coat Salmon: Add the cubed salmon to the miso butter mixture and toss gently until fully coated. Arrange the salmon bites in a single layer on the other half of the baking sheet, ensuring they do not overlap for even cooking.
- Roast: Bake for 13-17 minutes, or until the salmon is cooked through and flakes easily, and the broccolini is tender-crisp. Monitor closely as oven temperatures and salmon thickness can vary.
- Cook Pasta: While salmon and broccolini are roasting, bring a large pot of generously salted water to a boil. Add the pasta and cook according to package directions until al dente. Remember to reserve 1 cup of starchy pasta water before draining!
- Make Tahini Sauce: In a high-speed blender or food processor, combine tahini, fresh ginger, minced shallot, dried oregano, paprika, ½ tsp salt, maple syrup, lemon juice, and ¼ cup ice water (do NOT add pasta water yet!). Blend until completely smooth and creamy. If the sauce is too thick, gradually add a few more tablespoons of ice water until it reaches a thick salad dressing consistency.
- Combine and Serve: Drain the cooked pasta, returning it to the warm pot. Pour the tahini sauce over the noodles. Add the roasted broccolini. Toss well with tongs, ensuring every strand of pasta is coated. Gradually add the reserved pasta water (starting with ½ cup, adding more as needed, up to 1 cup) while tossing, until the sauce coats the pasta beautifully and reaches your desired creamy consistency.
- Final Assembly: Serve the creamy tahini pasta in bowls and top generously with the miso garlic butter salmon bites. Garnish with sesame seeds if desired, and enjoy your flavorful and wholesome meal!

- To make this dish dairy-free, simply use plant-based butter for the salmon bites.
- Regular chopped broccoli or colorful red bell peppers can be used instead of broccolini. Aim for about 1.5 – 2 cups finely chopped vegetables.
