A visual guide to the fresh, vibrant ingredients that form the foundation of our delicious salmon tacos.
  • Premium Salmon: The star of the show! Opt for fresh, high-quality salmon fillets. While any cut works, individually portioned fillets (around 6 ounces each) are incredibly convenient for even cooking and easy flaking. Look for vibrant, firm flesh with no strong odor.
  • Flavorful Seasonings: A simple yet potent mix of garlic powder, onion powder, paprika, salt, and black pepper creates a delicious blackened crust on the salmon, enhancing its natural richness without overpowering it. These pantry staples are essential for building a robust flavor base.
  • Cooking Oil: A high-smoke-point oil like avocado oil is ideal for sautéing the salmon, ensuring a beautiful sear without burning. Its neutral flavor also lets the salmon shine.
  • Crisp Cabbage Medley: The slaw provides crucial crunch and freshness. A combination of green and purple cabbage not only delivers a delightful texture but also adds a visually appealing splash of color to your tacos. Shredding it thinly is key for the best experience.
  • Fresh Jalapeños: For that perfect kick and extra crunch, thinly sliced fresh jalapeños are a must. They introduce a refreshing heat that complements the sweetness of the Bang Bang sauce. Adjust the quantity to your preferred spice level, and remember to remove seeds for less heat.
  • Bright Cilantro: Fresh cilantro is indispensable for its vibrant, herbaceous flavor that elevates the entire dish. It’s used both in the slaw and as a garnish, adding an essential aromatic note.
  • Creamy Mayonnaise: The backbone of our Bang Bang sauce. While any good quality mayonnaise works, Kewpie mayo is highly recommended. Its richer, tangier profile and slightly sweeter taste contribute to a more complex and authentic sauce.
  • Sweet Chili Sauce: This forms the sweet foundation of the Bang Bang sauce, providing a luscious, slightly sticky texture and a delightful balance to the heat. Choose a good quality Thai sweet chili sauce for the best results.
  • Fiery Sriracha: For those who love a bit of heat, Sriracha is the perfect addition to the Bang Bang sauce. It delivers a robust, garlicky spice that you can easily adjust to your personal preference. Start with a smaller amount and add more as desired.
  • Zesty Fresh Lime Juice: Freshly squeezed lime juice brightens up both the Bang Bang sauce and the overall taco assembly. Its acidity cuts through the richness of the salmon and the creaminess of the sauce, adding a vital burst of freshness. Don’t skip the lime!
  • Tropical Pineapple (Optional): For an extra layer of sweetness and a juicy, tropical contrast, diced pineapple makes an excellent optional topping. It pairs wonderfully with the spicy and savory elements.
  • Soft Tortillas: Whether you prefer classic corn or soft flour tortillas, ensure they are fresh and warmed properly before assembling. Small tortillas are ideal for these street-style tacos.

Visual progression of the Bang Bang Salmon Taco recipe, from prep to assembly, ensuring a smooth cooking experience.
  • Step One: Prepare the Salmon for Blackening. Begin by gently patting your salmon fillets completely dry with paper towels. This crucial step helps achieve a crispy skin (if applicable) and a beautiful blackened crust. Next, generously season both sides of the salmon with your mixture of garlic powder, onion powder, paprika, salt, and pepper. Rub the seasonings in well to ensure full coverage. Set the seasoned salmon aside to allow the flavors to meld while you prepare the other components.
  • Step Two: Assemble the Zesty Slaw & Bang Bang Sauce. This step involves creating two key elements for your tacos. First, prepare the star sauce: in a medium bowl, combine the mayonnaise, fresh lime juice, Thai sweet chili sauce, and Sriracha. Whisk thoroughly until the sauce is smooth, creamy, and well-combined. Taste and adjust the Sriracha to achieve your desired level of heat. Set this incredible Bang Bang sauce aside. Next, in a separate, larger mixing bowl, combine the shredded green cabbage, purple cabbage, thinly sliced jalapeños (deseeded for less heat, if preferred), and chopped fresh cilantro. Keep this slaw mix separate from the sauce for now.
  • Step Three: Perfectly Cook the Blackened Salmon. Heat a large skillet over medium-high heat. Add your chosen cooking oil (like avocado oil) and let it shimmer, indicating it’s hot enough. Carefully place the seasoned salmon fillets into the hot skillet, skin-side down if your fillets have skin. Allow the salmon to cook undisturbed for approximately 4 minutes. This initial searing creates that desired crispy skin and rich, blackened exterior. After 4 minutes, gently flip the salmon fillets and continue to cook for another 2-4 minutes, depending on the thickness of your fillets and your preferred doneness. The salmon is perfectly cooked when it turns opaque throughout, flakes easily with a fork, and reaches an internal temperature of 130-145ºF (54-63ºC) – generally, 130ºF for medium-rare, 145ºF for well-done.
  • Step Four: Dress the Slaw. While your salmon is cooking or resting after being removed from the heat, it’s time to dress your slaw. Pour about three-quarters of your prepared Bang Bang sauce into the bowl with the mixed cabbages, jalapeños, and cilantro. Toss everything together thoroughly until the slaw is evenly coated and every shred is glistening with the creamy sauce. Reserve the remaining Bang Bang sauce for drizzling over the assembled tacos, adding an extra layer of flavor and moisture.
  • Step Five: Assemble Your Masterpiece Tacos! Now for the grand finale – assembly! Gently break the cooked salmon into bite-sized flakes or chunks using a fork. Warm your tortillas according to package directions (a dry skillet or microwave works well). To assemble, layer a generous amount of the dressed Bang Bang slaw onto each warm tortilla. Follow with a healthy portion of the flaky blackened salmon. For an extra burst of flavor and texture, top with optional diced pineapple and a sprinkle of fresh cilantro. Finally, drizzle a little extra reserved Bang Bang sauce over the top of each taco for that perfect finishing touch. Serve immediately and savor every hot, flavorful bite!

However, if you’re looking to create a more festive spread or simply round out your dinner, they pair beautifully with a variety of side dishes that complement their sweet and spicy profile. Consider serving them with fresh, vibrant options that cleanse the palate or add another layer of texture. Here are some fantastic ideas to make your meal even more memorable:

  • Pineapple Pico de Gallo: The sweet and tangy notes of pineapple pico offer a tropical counterpoint to the salmon’s richness and the Bang Bang sauce’s heat.
  • Creamy Avocado Corn Salad: A refreshing salad with creamy avocado, sweet corn, and a zesty dressing provides a cooling contrast and extra freshness.

  • Simple Black Beans and Rice: A classic, easy side that provides a hearty, wholesome foundation.
  • Fresh Green Salad with Citrus Vinaigrette: A light, crisp salad can balance the richness of the tacos and add extra greens to your meal.

Expert Tips for Bang Bang Salmon Taco Perfection

Achieving outstanding results with your Bang Bang Salmon Tacos is simple when you keep a few key tips in mind. These insights will help you master the cooking process and ensure every bite is as delicious as possible:

  • Precision Salmon Cooking is Key: The most crucial aspect of this recipe is not to overcook or undercook your salmon. Salmon fillets vary in thickness and size, so cooking times will need to be adjusted accordingly. Aim for an opaque center that still flakes easily. Using a meat thermometer to reach 130-145ºF is the most accurate way to ensure perfect doneness without drying out the fish.
  • Skin-On Salmon Strategy: If your salmon fillets come with skin, always start by placing them skin-side down in the hot skillet. This allows the skin to crisp up beautifully, creating a desirable texture and protecting the delicate flesh from overcooking. If you’re using skinless salmon, simply reduce the cooking time slightly, as it will cook faster.
  • Taste and Customize Your Bang Bang Sauce: The beauty of homemade sauce is the ability to tailor it to your palate. Before dressing the slaw, taste your Bang Bang sauce. Do you prefer it less spicy? Add a touch more mayonnaise or sweet chili sauce. Crave more heat? Stir in extra Sriracha. Want it zestier? A squeeze of additional lime juice will do the trick. Don’t be afraid to experiment until it’s perfect for you.
  • Don’t Overdress the Slaw: While it might be tempting to use all the sauce, remember to add about three-quarters of the Bang Bang sauce to the slaw. This ensures the slaw is perfectly coated without becoming soggy, retaining its refreshing crunch. The leftover sauce is then perfect for drizzling over the assembled tacos, offering a fresh burst of flavor just before serving.
  • Warm Your Tortillas: A small detail that makes a big difference! Warming your tortillas makes them more pliable and enhances their flavor, preventing them from cracking when folded. A quick pass over an open flame, a few seconds in the microwave, or a warm dry skillet works wonders.
  • Storing Leftovers: Should you have any delightful leftovers, store the cooked salmon and the dressed slaw separately in airtight containers in the refrigerator. This helps maintain the best texture and flavor. Consume within 3 days for optimal freshness. Reheat salmon gently to prevent drying out.

Customization and Variations for Your Salmon Tacos

While the classic Bang Bang Salmon Tacos are undeniably delicious, don’t hesitate to get creative and customize them to your liking. Here are a few ideas to spark your culinary imagination:

  • Protein Swaps: Not a salmon fan, or want to try something different? This recipe works beautifully with shrimp, cod, or even grilled chicken. Adjust cooking times accordingly. For a vegetarian option, try crispy baked tofu or tempeh.
  • Slaw Adventures: Experiment with different vegetables in your slaw. Add finely shredded carrots, bell peppers, or even a handful of thinly sliced radishes for an extra peppery bite. A sprinkle of toasted sesame seeds can also add a nice nutty crunch.
  • Sauce Enhancements: Boost the Bang Bang sauce with a dash of rice vinegar for extra tang, a spoonful of honey for more sweetness, or a pinch of ginger for added depth. A hint of garlic chili oil can also intensify the heat and flavor.
  • Topping Innovations: Beyond pineapple, consider adding diced mango for another tropical twist, a sprinkle of toasted coconut flakes, or a dollop of fresh guacamole or sliced avocado for creaminess. A squeeze of extra lime is always welcome.

Frequently Asked Questions (FAQ)

Here are some common questions you might have when making your Bang Bang Salmon Tacos:

Q: Can I use frozen salmon for this recipe?

A: Yes, you can absolutely use frozen salmon! Just make sure to thaw it completely in the refrigerator overnight or under cold running water before patting it dry and seasoning. The cooking method remains the same.

Q: How can I make the Bang Bang sauce less spicy or spicier?

A: To make it less spicy, reduce the amount of Sriracha. You can even omit it entirely for a mild version. For more heat, gradually add extra Sriracha or a pinch of red pepper flakes until it reaches your desired spice level.

Q: What if I don’t have Kewpie mayo?

A: While Kewpie mayo offers a unique richness, regular full-fat mayonnaise will work just fine. You might consider adding a tiny pinch of sugar or a touch more lime juice to your regular mayo to get closer to Kewpie’s flavor profile.

Q: Can I prepare the slaw and sauce ahead of time?

A: Yes! You can shred the cabbage and chop the cilantro and jalapeños up to 24 hours in advance and store them in an airtight container in the fridge. The Bang Bang sauce can also be made a day or two ahead and stored in an airtight container. However, for the best crunch, only dress the slaw with the sauce just before serving your tacos.

Equipment

  • large skillet
  • mixing bowls

Ingredients

  • 12-15 oz salmon, about 2-3 6 oz salmon portions
  • 1 tsp avocado oil
  • ½ tsp each salt & pepper
  • ½ tsp each onion & garlic powder
  • ½ tsp paprika
  • 8-12 small tortillas, corn or flour will work!
  • ½ cup pineapple, diced, optional for topping

Bang Bang Sauce

  • ½ cup mayonnaise
  • 1 Tbsp fresh lime juice
  • ⅓ cup thai sweet chili sauce
  • 5 Tbsp Sriracha, adjust to your liking!

Slaw Mix

  • 1¼ cup shredded red cabbage
  • 1¼ cup shredded green cabbage
  • 1 Jalapeño, thinly sliced
  • ½ bunch fresh cilantro, chopped, use some for garnish if desired.

Instructions

  1. Prepare Salmon. Start with patting the salmon dry with a paper towel, add seasonings, rub them in and set aside.
  2. Prepare The Slaw. Mix up the bang bang sauce, set that aside. Add the cabbages, jalapeños and cilantro to a medium sized bowl and set aside with the bang bang sauce.
  3. Cook The Salmon. In a skillet, preheat the oil on medium heat until glistening. Add the seasoned salmon to the hot skillet, skin side down if the skin is on. Let it cook untouched for about 4 minutes to get the skin crispy. Flip the salmon and cook for another 2-4 minutes (depending on how you like your salmon cooked!) The salmon is ready when it is opaque, flakes easily, and has an internal temperature of 130ºF (54ºC).
  4. While the salmon cooks, or while it’s resting, mix the slaw. Add ¾ of the bang bang sauce to the mixing bowl with the cabbage and toss well until it’s all combined. Use the leftover sauce for drizzling on the tacos.
  5. Assemble the tacos! Break the salmon into bite sized pieces with a fork. Heat up some tortillas and layer with the slaw and the salmon. Top with pineapple, fresh cilantro and a drizzle of sauce. Enjoy hot!

Notes

  • Do not over or under cook your salmon. Be sure to cook according to the thickness and size of the filets, they will vary on times with size.
  • If the salmon has skin, always place the salmon skin side down. If it’s skinless that’s fine too – just cook for slightly less time.
  • Taste as you go. Try the Bang Bang Sauce before dressing the slaw and tacos. You may want it less spicy, or more creamy with extra mayo. You can really customize it to your liking.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
