The Soothing Benefits of Magnesium in Every Bite

Magnesium is an indispensable mineral, crucial for numerous bodily functions. It plays a vital role in supporting a healthy nervous system, promoting optimal muscle function, and maintaining cardiovascular health.* In our fast-paced lives, finding moments of tranquility can be a challenge. That’s why I often turn to these comforting tea cookies, especially during demanding weeks when I need a little extra help unwinding. Pairing them with a warm cup of chamomile tea creates an ultimate ritual of relaxation.

Beyond their calming attributes, these cookies boast a delightful chewy crunch, making them absolutely perfect for dipping into your favorite hot beverage, be it tea or a creamy plant-based milk. It’s a gentle reminder to slow down, savor the moment, and nourish your body and mind with a delicious, purposeful treat.

Embrace Plant-Based Baking: These Cookies are Completely Vegan!

One of the highlights of this recipe is its entirely vegan nature, making it accessible and enjoyable for everyone, including those with dietary restrictions or who choose a plant-based lifestyle. The secret to their incredible texture lies in the ingenious use of a chia egg. For those unfamiliar, a chia egg is a fantastic, natural egg substitute that performs wonderfully in many baking recipes. It’s incredibly easy to make: simply combine 1 tablespoon of chia seeds with 2.5 tablespoons of water and let the mixture rest for 5-10 minutes. As the chia seeds absorb the water, they form a gelatinous consistency that perfectly mimics the binding properties of a traditional egg. Flax eggs also work beautifully as an alternative if you prefer. This simple swap allows us to create soft, chewy cookies without any animal products, proving that vegan baking can be just as delicious and satisfying.

Effortless Elegance: Crafting the Vegan Blackberry Hibiscus Icing

Preparing the vegan icing for these tea cookies is surprisingly simple, requiring only a few key ingredients, yet yielding a stunning and flavorful result. The beauty of this icing is its adaptability – you can adjust its consistency to be as thick or as thin as you desire. I personally prefer a thicker icing, as it provides a richer color and a more substantial coating on the cookies, enhancing their visual appeal and ensuring every bite is bursting with flavor. The core ingredients for this luscious topping are powdered sugar, almond milk, and of course, the star flavor enhancer: MegaFood Relax + Calm* Magnesium Powder. You can choose between the Blackberry Hibiscus Oasis or the Raspberry Lemonade flavor to customize your experience. For an extra pop of natural color and a subtle berry tang, consider adding a couple of mashed blackberries – it gives the icing a gorgeous, deep hue and an even more pronounced fruity note.

Ingredients

  • ½ Cup coconut Oil
  • 1 tbsp chia seeds
  • 2.5 tbsp water
  • Cup all purpose flour
  • ¼ tsp salt
  • ¾ Cup sugar
  • ¼ tsp baking soda
  • 2 tbsp almond milk
  • ½ tsp almond extract (added for flavor, common in tea cookies)

For the Icing

  • 1 scoop of MegaFood Relax + Calm* Magnesium Powder Blackberry Hibiscus Oasis Powder
  • Cup powdered sugar
  • 2 tbsp almond milk
  • 1-2 blackberries for color, optional

Instructions

  1. Prepare your chia egg: In a small bowl, whisk together the chia seeds and water. Let it sit for 5-10 minutes until it forms a thick, gel-like consistency. While that’s setting, preheat your oven to 350°F (175°C).
  2. In a separate medium-sized bowl, combine the lightly melted or room temperature coconut oil with the granulated sugar. Whisk thoroughly until the mixture forms a thick, creamy paste. Stir in the almond extract, prepared chia egg, and almond milk until well combined.
  3. In another bowl, whisk together the all-purpose flour, salt, and baking soda. Gradually add these dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix.
  4. The cookie dough will be somewhat dry and crumbly. Using your hands, form the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Gently press down on each ball with the palm of your hand to flatten it into a cookie shape. The edges might appear slightly crinkled, which adds to their homemade charm, but feel free to gently smooth them if preferred.
  5. Bake in the preheated oven for approximately 12 minutes, or until the edges are lightly golden. Once baked, remove from the oven and allow the cookies to cool completely on the baking sheet. This step is crucial as it allows them to firm up and prevents breakage before handling or icing.

For the Icing

  1. In a medium bowl, combine the powdered sugar, almond milk, and MegaFood Relax + Calm* Magnesium Powder. Using a hand mixer, beat until a thick, smooth, and spreadable icing forms. For a thinner icing, add a little more almond milk, a teaspoon at a time. For a thicker consistency, gradually add more powdered sugar. Once the cookies are completely cool, carefully ice them. For an added touch of elegance and flavor, mash 1-2 blackberries into a small portion of the icing to create a beautiful purple hue. Drizzle this purple icing over the white icing for a truly unique and visually appealing effect. Enjoy your beautifully crafted vegan tea cookies!

Notes & Tips for Perfect Cookies

To achieve the lovely half-dip design often seen on tea cookies, gently dip one half of each cooled cookie into the white icing. Use a toothpick or the back of a small spoon to create a clean, straight line. For that special “girly” look, as mentioned, take a small portion of the remaining white icing and mash 1-2 fresh blackberries into it. This will create a vibrant purple icing. You can then use a spoon to drizzle this colored icing sparingly over the white-dipped cookies. This adds a beautiful contrast and an extra layer of berry flavor.

For best results, ensure your coconut oil is truly room temperature and soft, not liquid hot, for the cookie dough. This helps achieve the ideal texture. If your kitchen is warm, you might even chill the dough briefly (15-20 minutes) before shaping to make it easier to handle.

These cookies store well in an airtight container at room temperature for up to 3-4 days. If you prefer, you can also freeze the un-iced cookies for up to a month and then thaw and ice them when you’re ready to serve fresh treats.
