Why You’ll Adore These Mushroom Asada Tacos
These Mushroom Asada Tacos aren’t just a recipe; they’re a culinary revelation. Brimming with robust, smoky, and savory flavors, they stand out as a truly exceptional plant-based meal. You might expect to miss meat in a taco dish, but with this recipe, that thought won’t even cross your mind. The secret lies in our carefully crafted marinade, which infuses the portobello mushrooms with an incredible depth of flavor that mimics the richness of traditional asada.
Beyond the fantastic mushrooms, these tacos are elevated by a quick and easy chipotle slaw that adds a creamy, spicy crunch. For an extra layer of freshness and a delightful tropical twist, we highly recommend our homemade Pineapple Pico De Gallo – it’s a game-changer! Perfect for your next taco night, these vegetarian marvels offer a healthier, vibrant, and utterly delicious alternative that will impress even the most committed carnivores. They’re simple to make, packed with wholesome ingredients, and deliver an unforgettable taste experience that will quickly become a family favorite.
Key Ingredients for Unforgettable Flavor

Crafting these extraordinary tacos begins with selecting the right ingredients. Each component plays a vital role in building the layered flavors that make this dish so special. Here’s a closer look at what you’ll need:
- Portobello Mushrooms: The heart of our “asada,” large, fresh portobello mushroom caps are chosen for their meaty texture and ability to soak up rich marinades. Their robust size makes them perfect for grilling and slicing into substantial strips. If large caps are hard to find, smaller baby bella mushrooms, sliced thicker, can be used as a substitute.
- Essential Seasonings: A harmonious blend of spices brings the “asada” flavor to life. You’ll need onion powder for a foundational savory note, smoked paprika for its deep, earthy smokiness, and a good quality steak seasoning blend. Don’t underestimate the power of a quality seasoning blend; it significantly contributes to the authentic asada taste. Additionally, a touch of chipotle seasoning enhances the smoky, slightly spicy profile.
- Chipotle in Adobo Sauce: This ingredient is non-negotiable for achieving that signature smoky heat and rich umami found in authentic Mexican dishes. Chipotle peppers in adobo sauce impart a complex flavor that is both spicy and tangy, similar to the depth found in our popular Chipotle Chicken Tacos. Just a small amount goes a long way in flavoring the marinade.
- Pineapple Juice: More than just a tenderizer, pineapple juice is crucial for both flavor and aesthetics. In the marinade, its enzymes help tenderize the mushrooms, while its natural sugars caramelize beautifully on the grill, giving the mushrooms a stunning charred, grilled appearance and a hint of sweetness. For convenience, we recommend using the juice leftover from canned pineapple, especially if you’re making the Pineapple Pico De Gallo.
- Green Cabbage: The base for our quick and refreshing chipotle slaw. Shredded green cabbage provides a crisp texture and a mild flavor that balances the richness of the mushrooms and the spice of the chipotle dressing. It adds a crucial element of freshness and crunch to each taco.
- Homemade Pineapple Pico De Gallo (Optional, but highly recommended): While optional, this fresh, vibrant salsa takes these tacos to the next level. You can find the full recipe here. The sweet and tangy pineapple, combined with fresh tomatoes, onions, cilantro, and lime, offers a bright counterpoint to the smoky mushrooms and creamy slaw. If time is short, a good quality store-bought pico de gallo can be used.

Customizing Your Mushroom Tacos: Delicious Variations
One of the beauties of taco recipes is their versatility. These Mushroom Asada Tacos are no exception! Feel free to experiment with these variations to suit your taste preferences or to utilize ingredients you already have on hand. Each tweak can create a unique and equally delicious experience:
- Mushroom Alternatives: While large portobello caps are ideal for their steak-like texture, you can easily use sliced baby bella mushrooms (cremini mushrooms) if needed. Their smaller size means they might cook slightly faster, so adjust grilling time accordingly. You could also explore other hearty mushrooms like oyster mushrooms for a different texture.
- Steak Seasoning Substitutions: If you don’t have a pre-made steak seasoning blend available, don’t worry! You can create a simple yet effective substitute by combining 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of dried oregano. For a richer flavor, add a pinch of cumin or garlic powder.
- Pineapple Juice Alternatives: If pineapple juice isn’t on hand, orange juice makes an excellent substitute. It offers a similar level of acidity and sweetness, contributing to the caramelization and tenderization of the mushrooms. Apple juice can also work in a pinch, though it will impart a slightly different flavor profile.
- Pico De Gallo Creativity: The homemade Pineapple Pico De Gallo is a fantastic addition, but you have options. Try our vibrant Mango Pico De Gallo for another sweet and spicy fruit salsa. Alternatively, a classic store-bought pico de gallo or even a simple salsa verde can provide a refreshing topping. Feel free to add diced avocado or crumbled cotija cheese for extra richness and texture.
- Mayonnaise Swaps: For the chipotle slaw, if you prefer a lighter option or have dietary restrictions, plain Greek yogurt or sour cream can be used in place of mayonnaise. Both will provide a creamy base for the slaw, with Greek yogurt adding a pleasant tang and extra protein. Vegan mayonnaise is also an excellent substitute for a fully plant-based version.
- Spice Level Adjustment: If you enjoy a fiery kick, feel free to increase the amount of chipotle peppers in adobo sauce or add a dash of your favorite hot sauce to the mushroom marinade or the slaw dressing. Conversely, if you’re sensitive to heat, reduce the amount of chipotle or omit it entirely and rely on smoked paprika for flavor.
Step-by-Step: Crafting Your Perfect Tacos
Follow these easy steps to prepare your incredibly flavorful Mushroom Asada Tacos. The process is straightforward, ensuring you get maximum flavor with minimal fuss.

Step One: Prepare Your Fresh Toppings. Begin by preparing the Pineapple Pico De Gallo if you choose to make it from scratch. This fresh, vibrant salsa will add a burst of tropical flavor and texture to your tacos. Once prepared, set it aside so the flavors can meld beautifully while you focus on the main components. This step can often be done in advance to save time.
Step Two: Marinate the Portobello Mushrooms. Place the clean portobello mushroom caps into a large resealable plastic bag. Into the bag, add the olive oil, pineapple juice, minced garlic, chipotle peppers in adobo (for that essential smoky heat), smoked paprika, steak seasoning blend, onion powder, fresh lime juice, chopped cilantro, and a pinch of salt. Seal the bag tightly, ensuring all the air is squeezed out. Gently shake and massage the bag, making sure the mushrooms are thoroughly coated with the aromatic marinade. Allow the mushrooms to marinate for at least 10 minutes at room temperature, or for an even deeper flavor, refrigerate them for up to overnight. This marinating time is key to tender, flavor-packed mushrooms.
Step Three: Assemble the Chipotle Cabbage Slaw. In a medium-sized mixing bowl, combine the shredded green cabbage, mayonnaise, chipotle powder, and white vinegar. Toss all the ingredients together thoroughly until the cabbage is evenly coated in the creamy, spicy dressing. Let the slaw sit for a few minutes while you prepare the mushrooms; this allows the flavors to develop and the cabbage to slightly soften, enhancing its texture. Set this flavorful slaw aside.

Step Four: Grill the Asada Mushrooms. Preheat your grill or a heavy-duty grill pan to a high heat. Once hot, carefully remove the marinated mushrooms from the bag, allowing any excess marinade to drip off. Sear the mushroom caps for approximately 6 minutes per side, or until they develop beautiful char marks and are tender throughout. The high heat helps achieve a delicious caramelization, replicating the authentic asada texture. After grilling, slice the mushrooms into thin, bite-sized strips. Feel free to drizzle any remaining marinade over the sliced mushrooms for an extra burst of flavor before assembling.
Step Five: Assemble and Serve Your Tacos. Warm your tortillas according to your preference – whether in a dry pan, microwave, or lightly grilled for a smoky touch. For each taco, start by layering a generous amount of the creamy chipotle cabbage slaw at the bottom. Next, add a portion of the perfectly grilled and sliced mushroom asada. Finally, top with a spoonful of the fresh Pineapple Pico De Gallo. If you’re using corn tortillas, consider doubling them up for each taco; this provides extra structural integrity, preventing breakage when loaded with delicious fillings. Serve immediately and enjoy your vibrant, flavorful Mushroom Asada Tacos!

Mushroom Asada Tacos: Your Questions Answered
These mushroom asada tacos are designed to be flavorful with a pleasant warmth, but not overly spicy. The chipotle in adobo and chipotle powder contribute a smoky depth rather than overwhelming heat. If you are particularly sensitive to spice, you can easily reduce the amount of chipotle seasoning, or even substitute a mild paprika for smoked paprika if preferred. Conversely, for a bolder kick, feel free to add more chipotle!
Absolutely! Making these mushroom asada tacos low carb is simple: just swap out traditional flour or corn tortillas for your favorite low-carb tortilla brand. You can also use large lettuce cups or sturdy collard green wraps as a fresh, crunchy, and carb-free alternative. For a gluten-free option, ensure you use certified gluten-free corn or flour tortillas and double-check that your steak seasoning blend does not contain any gluten-derived ingredients.
Ideal Pairings for a Complete Meal
To elevate your Mushroom Asada Taco experience into a full and satisfying meal, consider pairing them with these delicious side dishes. Each option complements the smoky, savory flavors of the tacos beautifully:
- Fresh Salads: A light and refreshing salad provides a perfect balance. Our Avocado Corn Salad offers a creamy, sweet, and savory contrast. Alternatively, our crisp Kale Salad with Lemon Honey Dressing adds a healthy, tangy, and invigorating element.
- Rice and Beans: Classic Mexican rice or a simple side of black beans (or both!) are always excellent choices. They add heartiness and familiarity, making the meal even more filling.
- Chips and Guacamole: You can never go wrong with a side of crispy tortilla chips served with fresh homemade guacamole. The creamy richness of the avocado is a wonderful counterpoint to the vibrant tacos.
- Grilled Vegetables: A side of grilled corn on the cob or lightly charred bell peppers can mirror the grilled aspect of the mushrooms and add more fresh produce to your plate.
Make Ahead & Storage Solutions for Freshness
These Mushroom Asada Tacos are perfect for meal prepping or preparing in advance, ensuring you can enjoy a quick and delicious meal whenever hunger strikes. Thoughtful preparation and storage will keep all the components fresh and flavorful:
- Make-Ahead Prep: The mushrooms can be marinated up to 24 hours in advance. This allows them to soak up even more flavor, enhancing their “asada” profile. Prepare the chipotle slaw and the pineapple pico de gallo (if using) a day in advance as well, storing them in separate airtight containers in the refrigerator. This compartmentalized approach ensures each component retains its optimal texture and taste until assembly.
- Storage of Leftovers: To prevent soggy tortillas and maintain freshness, always store the cooked mushroom asada, chipotle slaw, and pico de gallo in separate airtight containers in the refrigerator. They will remain fresh and delicious for up to 4 days.
- Reheating Tips: When ready to enjoy your leftovers, gently reheat the mushroom asada in a pan or microwave until warmed through. Warm your tortillas separately, and then assemble your tacos with the chilled slaw and pico de gallo. This method ensures the best possible texture and temperature contrast.
