Chicken and Seasonings

  • Chicken Breasts: We recommend boneless and skinless chicken breasts for their lean protein content and ease of preparation. They cook quickly and absorb the seasonings beautifully. For a richer flavor, boneless, skinless chicken thighs can also be used.
  • Olive Oil: Used for cooking the chicken, olive oil provides a neutral base and contributes healthy monounsaturated fats. You can also opt for other neutral-flavored oils like avocado oil or grapeseed oil.
  • Chicken Seasonings: A blend of Cayenne Pepper, Salt, Black Pepper, Garlic Powder, and Onion Powder creates a savory and subtly spicy coating for the chicken, enhancing its flavor before it joins the fresh salad. Adjust cayenne to your desired heat level.

Fresh Salad Components

  • Fresh Unripe Mangos (Green Mangos): This is the star of the dish! Unripe mangos are firm, less sweet, and possess a delightful tartness that is crucial for the authentic flavor and crisp texture of this salad. Their firm consistency allows them to be grated or thinly sliced without becoming mushy, holding up perfectly in the salad. Look for them in the produce section of Asian grocery stores or well-stocked supermarkets.
  • Bean Sprouts (Mung Beans): These add a fantastic, refreshing crunch and are a traditional element in many authentic Thai dishes. Find them in the refrigerated produce section.
  • Red Bell Pepper: Sliced thinly, red bell pepper contributes a beautiful color, a sweet counterpoint, and a satisfying crunch. Feel free to use any color bell pepper you prefer.
  • Red Onion: Adds a sharp, pungent bite and another layer of color and texture. For a milder flavor, you can soak the sliced red onion in ice water for 10-15 minutes before adding it to the salad.
  • Red Thai Chile (Fresno Pepper): These peppers are fairly spicy and provide the signature heat of the salad. For a milder version, reduce the amount or omit entirely. If you enjoy heat, you can even add a bit more.
  • Cashews: Unsalted cashews offer a wonderful nutty flavor and a crucial textural contrast with their satisfying crunch. Peanuts are a traditional alternative and work just as well.
  • Avocado (Optional): For an added layer of creaminess and healthy fats, sliced avocado is a fantastic addition. It also contributes another vibrant color to the salad.
  • Coconut Flakes (Optional): A sprinkle of unsweetened coconut flakes can introduce a subtle sweetness that beautifully balances the spice and tang of the salad, while adding a unique texture.
  • Fresh Basil & Cilantro: These aromatic fresh herbs are indispensable for their bright, herbaceous flavors, which are characteristic of Thai cuisine. They elevate the freshness of the entire dish. While parsley can be used in a pinch, it will alter the authentic flavor profile.

Irresistible Dressing Ingredients

  • Low-Sodium Soy Sauce: Forms the savory, umami-rich base of our simple yet powerful dressing. Using low-sodium allows you more control over the overall saltiness of the salad. Tamari or coconut aminos are excellent gluten-free alternatives.
  • Thai Chili Sauce: This sweet and spicy condiment is a cornerstone of Thai flavor. It brings complexity and a pleasant heat to the dressing. Look for it in the international aisle of your grocery store. The Mae Ploy brand is a popular and authentic choice, widely available online.
  • Fresh Lime Juice: Essential for its bright, tangy, and citrusy punch, fresh lime juice provides the perfect acidic balance, cutting through the richness and harmonizing the other flavors. Do not use bottled lime juice for this recipe, as fresh is key.
  • Maple Syrup: Adds a natural sweetness and a subtle nutty depth to the dressing. If maple syrup isn’t available, honey or brown sugar can be used as substitutes, though they may slightly alter the flavor profile.
  • Garlic Clove: Freshly minced garlic is vital for a pungent, aromatic kick that permeates the entire dressing, enhancing its savory notes.

Thai Mango Salad Recipe Variations and Customizations

This Thai mango salad is incredibly forgiving and easily adaptable to suit different tastes and dietary requirements:

  • Vegetarian or Vegan: Effortlessly transform this dish by omitting the chicken. Instead, incorporate crispy baked tofu, pan-fried tempeh, seasoned chickpeas, or a plant-based chicken alternative. Ensure your soy sauce and Thai chili sauce are vegan-friendly (most are, but always check labels).
  • Quick and Easy Meal: Short on time? Opt for pre-cooked rotisserie chicken, leftover grilled chicken, or even pre-cooked shrimp to significantly reduce cooking time and effort, making this a lightning-fast no-cook or minimal-cook recipe.
  • Gluten-Free Option: Simply swap out regular soy sauce for tamari or coconut aminos to make this delightful salad entirely gluten-free without sacrificing flavor.
  • Bean Sprout Alternatives: If bean sprouts are hard to find or you prefer another texture, shredded zucchini, finely julienned cucumber, or thinly sliced green cabbage make excellent crunchy substitutes.
  • Lower-Carb and Calorie Considerations: To reduce carbohydrates and calories, you can slightly decrease the amount of mango and maple syrup in the dressing. Focus on increasing the volume of other non-starchy vegetables like bell peppers and bean sprouts. While mango is central to this dish, enjoying it in moderation allows for a lighter version.
  • Other Protein Options: Experiment with grilled salmon, seared shrimp, or even thinly sliced cooked beef for different flavor combinations. Crispy fried chicken pieces or battered fish also pair surprisingly well for an indulgent twist.
  • Nut-Free Version: If you have nut allergies, simply omit the cashews. You can replace them with toasted pumpkin seeds or sunflower seeds for a similar crunch, or just enjoy the salad without added nuts.

Step-by-Step Guide: How to Make Thai Mango Salad

Creating this flavorful Thai mango salad is a straightforward process. Follow these simple steps for a truly delicious result:

Step One: Prepare and Cook the Chicken
Begin by heating a large skillet over medium-high heat. In a small bowl, whisk together the cayenne pepper, salt, black pepper, garlic powder, and onion powder to create your seasoning blend. If your chicken breasts are particularly thick, slice them horizontally in half to create thinner cutlets, ensuring even and faster cooking. Generously coat the chicken breasts with the prepared seasoning. Add ½ tablespoon of olive oil to the heated skillet. Once hot, add the seasoned chicken and sauté for approximately 7 minutes per side, or until the internal temperature reaches a safe 165ºF (74ºC). Chicken breast sizes vary, so always use a meat thermometer to confirm doneness. Once cooked, remove the chicken from the skillet and let it rest on a cutting board for 5-10 minutes. Resting allows the juices to redistribute, resulting in more tender and flavorful chicken.

Step Two: Prepare the Unripe Mango
While the chicken rests, prepare your star ingredient. Using a paring knife or a vegetable peeler, carefully peel the skin from the unripe mangos. The firmness of unripe mango is key here; it allows you to grate or shred it perfectly using a standard cheese grater. A firm mango will yield beautiful, crisp shreds with minimal runny juice, which is essential for the texture of this salad. If you accidentally use a slightly softer or riper mango, slicing it thinly with a knife is a better alternative to grating.

Step Three: Whisk the Dressing and Prep Fresh Ingredients
In a medium bowl, combine all the dressing ingredients: low-sodium soy sauce, fresh lime juice, maple syrup, Thai chili sauce, and minced garlic clove. Whisk everything together until thoroughly combined and emulsified. Set aside. Next, finely chop your fresh basil and cilantro. Thinly slice the red bell pepper, red Thai chile (Fresno pepper), and red onion. If using cashews, give them a rough chop to create varying textures. Dice your cooked chicken breasts into bite-sized pieces.

Step Four: Combine and Toss the Salad
In a very large mixing bowl, combine all the prepared mango salad ingredients: the shredded unripe mango, bean sprouts, sliced red bell pepper, red onion, red Thai chile, chopped cashews, basil, cilantro, and optional avocado and coconut flakes. Add the diced cooked chicken to the bowl. Pour the freshly whisked dressing generously over all the ingredients. Using large salad tongs, gently toss everything together until all the ingredients are evenly coated with the dressing. Ensure every component gets a share of that incredible flavor.

Step Five: Serve and Enjoy Immediately!
Once thoroughly tossed, your vibrant and flavorful Thai mango salad is ready to be served. Divide it among individual serving bowls and enjoy it immediately to experience the freshest textures and most potent flavors. The crispness of the vegetables and the bright notes of the dressing are best appreciated right after assembly.

Pro Tips for the Perfect Thai Mango Salad

Achieve an exceptional Thai mango salad every time with these expert tips:

  • Storing Leftovers: If you have any leftovers, store them in an airtight container in the refrigerator for up to three days. It’s best to keep the dressing separate if you anticipate leftovers, but if already dressed, give it a good toss before serving as the dressing tends to settle at the bottom. We do not recommend freezing this salad, as the fresh ingredients will lose their texture and vibrancy upon thawing.
  • The Importance of Unripe Mango: The success of this chicken mango salad hinges on using an unripe mango. Its firm texture and tart flavor are crucial for both grating and balancing the sweet and spicy notes of the dressing. Ripe mangos are too soft for grating and would make the salad overly sweet and mushy. If you absolutely cannot find unripe mangos, slice a ripe but firm mango with a knife rather than grating it, and be prepared for a sweeter overall flavor profile.
  • Serving Suggestions: This spicy mango salad is substantial enough to be a hearty main dish on its own. It pairs wonderfully with a light vegetable soup, crusty bread, or a side of sticky rice. Alternatively, enjoy it as a vibrant side dish, with or without the chicken, alongside other Thai favorites such as this succulent Thai Salmon or a comforting Thai Cashew Chicken. Garnish with extra fresh herbs, a sprinkle of roasted peanuts, or a wedge of lime for an extra flourish.
  • Don’t Overcook the Chicken: Overcooked chicken can become dry and tough. Always aim for an internal temperature of 165°F (74°C) and allow it to rest before dicing to keep it juicy and tender.
  • Adjust Spice to Your Liking: The red Thai chilies (Fresno peppers) provide a significant kick. If you’re sensitive to spice, start with half a chili or omit it entirely. For more heat, add an extra chili or a pinch of red pepper flakes.
  • Fresh Herbs are a Must: The fresh basil and cilantro are non-negotiable for the authentic taste of this salad. Use them generously for maximum aromatic impact.
  • Meal Prep Friendly (with a twist): To meal prep, prepare the chicken and all the chopped vegetables and fruits, storing them separately. Whisk the dressing and store it in a separate container. Combine everything just before serving to maintain optimal freshness and crunch.

Thai Mango Salad FAQ

Here are answers to some common questions about making and enjoying Thai Mango Salad:

Is Thai Mango Salad Spicy?

Yes, traditional Thai Mango Salad typically has a pleasant level of heat (spice), primarily from the fresh red Thai chilies (Fresno peppers). However, the spice level is easily customizable. If you prefer a milder flavor, you can significantly reduce the amount of chilies or omit them entirely. For those who love heat, feel free to add an extra chili or a dash of your favorite hot sauce to the dressing.

Can I use a different protein?

Absolutely! While chicken is a fantastic choice for its lean protein, this salad is incredibly versatile. You can replace the chicken with other cooked proteins such as grilled or pan-seared salmon, succulent shrimp, crispy tofu, or even shredded pork. For a vegetarian option, chickpeas or black beans also work wonderfully, providing a different texture and nutritional profile.

What kind of mango should I use?

For this particular recipe, it is crucial to use *unripe* or *green* mangos. These mangos are firm, less sweet, and have a wonderfully tart flavor that is essential for the salad’s signature taste and crunchy texture. Ripe mangos would be too soft for grating and would make the salad overly sweet and potentially mushy. Look for mangos that are firm to the touch and predominantly green in color.

Can I make this salad ahead of time?

For the best possible taste and texture, it’s recommended to assemble and dress the salad just before serving. However, you can prepare many components in advance. Cook the chicken and chop all the vegetables and herbs, storing them in separate airtight containers in the refrigerator. The dressing can also be whisked together and stored separately. Combine everything within an hour or two of serving to ensure optimal freshness and crunch, preventing the ingredients from becoming soggy.

Is this recipe gluten-free?

The original recipe with standard soy sauce is not gluten-free. However, it can easily be made gluten-free by substituting regular soy sauce with gluten-free tamari or coconut aminos. Always double-check the labels of your Thai chili sauce and any other bottled ingredients to ensure they are also gluten-free.

Equipment

  • cheese grater
  • large skillet

Ingredients

For The Chicken

  • 0.75 – 1 lb chicken breasts, boneless, skinless sliced in half
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ Tbsp olive oil

For the Salad

  • 1 red bell pepper, thinly sliced
  • 2 firm, unripe green mangos
  • cups bean sprouts, These are also known as mung beans.
  • 1 red chile, thinly sliced, Omit if very sensitive to spice.
  • ¼ cup cashews, unsalted
  • 3 Tbsp basil, chopped
  • 3 Tbsp cilantro, chopped
  • 3 Tbsp coconut flakes, optional
  • 1 avocado, sliced, optional

For The Dressing

  • ¼ cup low sodium soy sauce
  • ¼ cup fresh squeezed lime, about 1 – 1½ lime
  • 2 Tbsp maple syrup, Honey also works.
  • 2 Tbsp thai chili sauce
  • 1 garlic clove, minced

Instructions

  1. Heat a skillet on medium-high heat. Whisk together the chicken seasonings, slice breasts in half if they are large, and coat the chicken in the seasoning. Add oil to the skillet and sauté chicken for about 7 minutes each side, or until the internal temperature is 165ºF (74ºC). Chicken breast sizes vary so be sure to check! Let the chicken rest for 5-10 minutes.
  2. Using a paring knife or peeler, peel the skin of the mango. Then use a cheese grater to grate/shred the mango. This is why the mango can’t be too soft; a more firm mango will give perfect shreds with less runny juice.
  3. Mix up the dressing ingredients and whisk together until well combined. Next, finely chop the herbs (basil and cilantro), thinly slice the bell pepper, Fresno pepper (red chile), and red onion if using. Roughly chop the cashews if using, and dice up the cooked chicken breasts.
  4. Add all the Thai Mango salad ingredients, chopped chicken, and the dressing to a large bowl and toss together well until everything is evenly coated.
  5. Serve and enjoy right away for the best flavor and texture.

Notes

  • Storing: Store leftovers in the fridge for up to three days in an airtight container. Be sure to toss together before serving any leftovers, as the dressing can settle to the bottom. We do not recommend freezing this meal!
  • Use Unripe Mango: Since we are grating the mango, it works best to use an unripe mango which is firmer and less juicy in this chicken mango salad recipe. If you do use soft or ripe mangos, we’d recommend slicing it with a knife rather than grating it.
  • Serving Tip: This spicy mango salad makes a hearty main dish for meals and goes great with a veggie soup or bread on the side. Enjoy it as a side dish with or without the chicken along with this Thai Salmon or Thai Cashew Chicken.
